6 months since brewing. It's become maltier - decidedly so. It's lacking body, but does contain significant crystal malty sweetness. tastes good - better than before even

Feb 25 - served at about 15 degrees. Delicious. Nice body, sweet malt, light caramel and just a bare touch of roast. Hop flavour has diminished some, and it now nicely balanced with the malt. Loving it!

After letting the airlock dry out a few times, I noticed a pellicle forming (again). I don't think it's infection, as the airlock was filled with Everclear... It's probably just the Brett reacting to the presence of oxygen. I replaced the airlock with a rubber stopper. After 5 months, there can't be too much c02 production still happening. I'll have to remember to open it up occasionally to see if any pressure is building up.
