9 oz. of hop pellets in a secondary for dry hopping is a lot! Prepare for a mess and to lose a good bit of beer.

Well, when it was time to add the Perle I went to get it and....no Perle, they forgot to ship it. Didn't really have any proper bittering hop to substitute so I just went with one with a decent alpha percentage...Simcoe. Hopefully it won't impart too much flavor since it will be boiled for 60 mins.
