After two weeks of primary fermentation, I added the chocolate. I decided to also add a third of a vanilla bean to the mix. I baked 6 oz of crushed cocoa nibs at 300 for 30 min, cooled them with vodka to cover and then poured the mix into the primary. The vanilla bean was soaking in the vodka while the beans were baking. I hope I didnt add anything that will harm the beer, but between the alcohol in the vodka dn the alcohol in the beer, I think I am safe. I'll let this sit for 10 days and then rack to keg.

Tasted a bottle... It tastes powerfully of carafa II, but I sure am glad I have 5 gallons of this laagering! I would make it again, perhaps with 15% carafa II, and work down from there. There is a strong bite to the beer with tastes tannic, or perhaps like an overroasted coffee bean. Not burnt, but the taste pops out at you. I find it pleasant, but others may want to be careful...

That's one heck of an IBU score... You might want to add a pound or two of some cayenne pepper to the secondary to mellow out the bitterness ;-)
