Over The Top Extreme Imperial IPA

When way too much is still not quiet enough this is the beer for complete hop addicts. 130 mins., 130IBU, 13% alcohol, like I said, way too much. Leave it in the bottle for at least a year and maybe you won't shoot yourself after drinking it. I wanted whole leaf hops for the mash tun, but could only find pellets.

tasting notes

I just can't taste the malt at all in this thing. If I brew another batch of this, next time I'll do all the color adjustment with Carafa III. There's just no use adding specialty malts to something this bitter as far as I can taste.

I just, 15 March 2010, tasted a bottle of this that was brewed Sept '07. It is still a freaking beast. The hop aroma has died down. The alcohol has matured, not as hot, more sherry like notes. I bottled it with champagne yeast, which seems to have worked out well. It's still way too bitter, really hard to drink all twelve ounces. A bottle a day of this stuff would probably kill all the bacteria in your gut. I'm actually considering brewing another batch this summer, maybe change things a bit.

What a sissy looking bier! A manly bier would have at least 150 IBUs!!! :) Oh I need more TIME, room, & fermenters so I can brew up something like this.
