Take the first runnings (2 Gallons) and boil them down to about 1 gallon to 1/2 gallon (about 1 hour) and add back into the main boil. This will add color and sweetness. Also I am thinking about letting this beer sit in secondary on top of some Tullamore Dew soaked oak chips.
Also take 3 lbs of the Two-Row and roast it in the oven for 10 minutes at 350F. Mash in 16 qts of water at 155 for 1 hour and then sparge with almost boiling water. You want to collect 3 3/4 - 4 gallons of water.
Boil for 45 minutes add the 1st runnings when the boil is over.
